techniques and capturing each season's delicious,
unique flavour.
Every person in my team is an important
link and is involved in the well oiled chain that culminates with
our dinner guests 'taking a moment' after the very first
mouthful."

Nicolas Roulier
Nicolas joined us in January 2008 from Seaham Hall
Hotel and heads the superb restaurant team operating The
Bybrook. His professional background has provided him with an
unrivalled knowledge of food and wine which he
enthusiastically brings to our award-winning restaurant.
